About the Cup
This cup has a black cherry fragrance with aromas of blueberry and maple. It brings to mind blueberry, cherry, cocoa powder, and rose. The aftertaste is clean with lime, orange zest, and rue. It has mild citric acidity, a medium body, and a silky mouthfeel. Overall, it offers cherry notes, tropical fruit, milk chocolate, a wine-like peppery finish, and a syrupy body.
About the Process & Gigesa Washing Station
Gigesa is a small town in Ethiopia's Guji Zone, near Shakiso. The Gigesa washing station owned by the Yonis family, serves over 500 local coffee growers with 2-5 hectares of land each, all above 1800 meters. It is NOP and EU Organic certified. Fresh cherries are floated to remove lower quality ones, dried in the shade for 3-5 hours, and then on raised beds for 15-18 days.
About Heirloom Blends
Ethiopia is the birthplace of coffee which contributes 10% to the country's GDP. It has the most diverse coffee varieties, with over 100 confirmed and possibly 10,000 unique types. Farmers also use hybrid varieties developed by the Jimma Agricultural Research Centre (JARC), which are pest-resistant and higher yielding. In Ethiopia, it's rare to find single-varietal coffee lots; most coffees are blends graded by the Ethiopian Commodity Exchange (ECX) and called 'Ethiopian Landrace' or 'heirloom varietals.'
