Hand picked at peak ripeness. Exposed to dry anaerobic fermentation for 72h (pulp still on) with Tartaric Acid and cinnamon sticks added.  
After dry fermentation the coffee cherries are pulped and placed to dry on raised beds with cinnamon sticks until the ideal moisture content is achieved.

Villa Betulia sits at 1600m in Acevedo in the coffee region of Hulia. The soil is Volcanic ash, the temperature ranging from 18-24C and an annual rainfall of 1700-2000mm. They grow Caturra and other native Colombian varietals as well as exotic rare coffees like Pink Bourbon and Gesha.

Caturra is a botanical cultivar that originated in Minas Gerais Brazil and is a result of a natural mutation of the varietal bourbon. Grown throughout South and Central America it is prized for its good cup quality and high density cultivation.  I
The fermentation/Inoculation process that uses tartaric acid and cinnamon sticks takes what is a good botanical cultivar to new interesting heights and underscores the financial benefits experimentation, when done to the highest level, can provide for producers.
