About the Cup

We experience a profound and lingering sweetness that captivates the palate. The structure is excellent, providing a well-balanced and harmonious framework of flavors. About Lacto-Fermentation

Coffee cherries are hand-picked at peak ripeness to ensure the best quality. They are then floated in water to remove defects and submerged in a 2% saltwater solution for 24 hours to kill pathogens and promote the beneficial bacteria, Lactobacillus. Afterward, the cherries are depulped and fermented again in parchment in another 2% saltwater solution. Finally, the beans are dried on shaded raised beds without washing until they reach a moisture content of about 10%.

About Finca Ticuna Osito

Finca El Mirador is owned by Osito founders Jose Jadir Losada and Kyle Bellinger. Located in the village of Picuma, near the Rio Suaza, the farm has grown from 11.7 to 23 hectares since Kyle and Jose started their partnership. Picuma is special to Jose because he grew up there, and the Osito team often visits his parents who still live in the village. Jose now lives with his family in Garzon, but Picuma remains close to his heart. El Mirador has two year-round workers, including Jose's father-in-law Carlos. During the harvest, the team expands to about 25 pickers. Recruiting pickers in this area is challenging because more lucrative work is available in coca farming in nearby Caquetá. Kyle and Jose aim to attract workers by offering wages well above the national average.
