Coffee Review Evaluation

We are extremely excited to release another extremely rare varietal from our producing partners at Cafe La Granja in Colombia. Accounting for just 1% of all the coffee grown in Colombia, the Tabi coffee plant is the very definition of a deep cut coffee.

Initially the hybrid plant was created as a response to coffee leaf rust (CLR).

CLR first reared its ugly head in the 1860s decimating the Sri Lanka coffee industry, and is one of the major reasons Sri Lanka now grows tea rather than coffee. Both India and Sri Lanka were once major coffee producing nations. CLR continued its rampant destruction of coffee farms across the world, reaching Asia & Africa in the 1920's, Brazil by 1970 and the rest of South and Central America by 1981. Initially affecting only lower elevation coffee trees (those below 1600m), climate change has steadily advanced this to a much higher line, with CLR now affecting trees as high as 2000m.

In the 1920s on the island of Timor in Indonesia a fortuitous occurrence of nature happened with the natural cross pollination of a Robusta and Arabica coffee plant that resulted in a freaky hybrid plant that was immune to CLR. Nature had created its own vaccine plant.

Looking to increase the quality of this natural vaccine plant the Colombian coffee research Institute (CENICAFE) refined and crossed the Timor hybrid with Typica and Bourbon Varietals and the result is the Tabi the varietal. Human and nature combining to create a CLR resistant & fantastic tasting coffee. Tabi simply means Good in Colombia.

We fell in love with this good coffee on our last origin trip to Colombia in Oct 2019. On that visit we were introduced to a number of exquisite rare varietals at the farms of the legendary producers Cafe la Granja. Rigoberto showcased to us Sudan Rume, Tabi and Gesha. And of all them it was the Tabi that was the most exotic The exoticism is heightened by the fact that the coffee has gone through an anaerobic fermentation process more akin to wine making than coffee producing.

Planted three years ago, This is the first harvest La Granja has ever produced of this coffee. And we are stoked to be one of the first roasters to ever offer their interpretation of this vaccine varietal.

This coffee is thick and heavy on the tongue and a little boozy to boot. Like brandywine centered dark chocolate fudges. It's out there and unlike anything you will have tasted. We love it here at modcup. This is a VERY LIMITED release. Get some while you can.
