Ethiopia Gotiti Gedeb Natural Dry Process

Hand-picked at peak ripeness. Floated to remove further defects. The cherries are then laid out on raised beds to naturally dry in the sun. The raised beds increase airflow around the whole fruit allowing for more even drying. To prevent bruising and thus spoiling of the cherry the fruit is steadily moved, raked and turned throughout the day. The drying process takes around 3 weeks. After ideal moisture content is achieved cherries are sent to mills for hulling.
About Gotiti Gedeb
Gedeb is deep in the Southern Ethiopia coffee zone. Bordered on the east and south by the Oromia Region, on the west by Kochere and to the northwest by Yirgacheffe. Gotiti Gedeb like much of the surrounding areas is red clay country. Heirloom varieties of coffee plants grow at super high elevations amongst local shade trees Africana, Acacia and the ubiquitous Ensete ventricosum. 600 smallholder farmers handpick their cherries for these wonderful Gotiti coffees. This coffee was sourced by Catalyst Coffee, who work exclusively with Ethiopian coffees
About Ethiopian Heirlooms Varietals
Ethiopia is the birthplace of all coffee and accounts for 10% of the country’s GDP. Ethiopia contains more coffee biodiversity than any other producing region with over 60 different and unique varietals now confirmed. Unlike other producing countries however it is almost impossible to source single varietal coffee lots. In Ethiopia all lots, no matter which one of the 60 plus varieties they are, are mixed together and graded based on quality under the watchful control of the ECX. As a result almost all Ethiopian coffees are blends of the many Ethiopian varieties, and referred to as 'Ethiopian Landrace' or "heirloom varietals."
