Chiapas is a southern Mexican state on the boarder of Guatemala and its coffees are prized for their balanced acidity and sweet flavor profile.

The Bella Vista municipality is located deep in the Chiapas region of Mexico, and is the birthplace of Rosalba Cifuentes, the founder of Mayan Harvest. After moving to San Francisco, Rosalba realized specialty coffee shops in the US rarely featured Mexican coffee. Rosalba founded her organization (which has now grown to 85 producers, over 60 of whom are women) to work with coffee producers in the area on improving coffee quality though harvesting and processing techniques to get more competitive prices. Many of these producers have very little land, so these increased premiums make a significant difference in the producers’ livelihoods. Mayan Harvest also provides medical and dental assistance to its members as well.

Our partners at Royal Coffee NY introduced us to Rosalba and the Mayan Harvest coffee in 2018 when she visited modcup. We are thrilled to offer this coffee for the third consecutive year. With its sweetness, full body, and orange blossom nuance, it showcases the quality possible in coffees from Mexico.

A fantastic classic style drip coffee this Chiapas is also a wonderful coffee to cold brew with. It's a nailed on summer winner.
