Produced by world famous Colombian producers Cafe la Granja in the Valle Del Cauca and entirely from trees of the Sidra variety of Arabica. This is a very special offering that has us all very excited here at modcup.
Sidra is a new hybrid varietal, made of Red Bourbon and Typica that combines characteristics of both of these two varieties. The sweetness and the body of Red Bourbon and the bright taste and acidity of Typica. It has quickly become a favorite of both progressive producers and brewers fortunate enough to get their hands on these small very special micro lots.
This is our first ever Sidra offering at modcup and one of three VERY SPECIAL rare varietals we will offer over the the coming three months from our dear friends and direct trading partners at Cafe La Granja.
This is a dry-processed or “natural” version, meaning the beans were dried inside the fruit rather than after the fruit has been removed, as is the case with wet-processed or “washed” coffees. As a result of the processing the strong fruit flavors already inherent in the Sidra varietal are taken up to 11. We taste a plethora of red fruits, a little tropical fruit action and all of it enveloped in a truffle like decadent cacao casing. If there was ever a coffee that underlined FAC01 it is this.
