About the Double anaerobic thermal shock processing method

Hand picked at peak ripeness. Sterilized with ozonated water and ultraviolet light. The first stage of cherry fermentation is for 22 hours and conducted inside an anaerobic bioreactor with saccharomyces diastaticus yeast added to promote floral flavors. After which the coffee is de-pulpled (cherry skin and pulp removed from seed/bean. The second stage of fermentation is conducted again inside an anaerobic bioreactor, this time for an extended 42 hours until PH level is 5 and Brix 15. After double fermentation is concluded the beans are thermal shocked, first with 40C hot water and then 12C cold. The drying stage of 48h is then meticulously controlled with mechanical drying equipment at 35C.

In charge of it all is chief mad coffee scientist/producer Wilton Benitez who’s farms have their own microbiology laboratory, a quality laboratory and processing plant. Wilton is quite simply producing world class coffee.

About Gesha varietal
Gesha coffee, sometimes referred to as Geisha coffee is a variety of coffee tree that originated in the Gori Gesha forest, Ethiopia. It is widely known and prized for its unique flavor profile of intense florals and citrus and is recognized in the industry as the superstar varietal. It breaks price records what seems like every year now, the last record price exceeding $2500 per lb, paid for a Panama Gesha from the famed Elida Estate. This exceedingly rare micro lot is 100% Yellow Gesha. The Gesha varietal's cherries usually ripen to a red colour. However, some rare trees produce yellow cherries, from which the Yellow Gesha gets its name.
