Our Second consecutive harvest buying this exceptionally fruit forward, exotically processed rare varietal grown at Finca El Vergel and exported by Forrest Coffee. 

Java is a very rare coffee varietal in Colombia, and in this case, it is a coffee grown in the face of the snowy mountain "El Ruiz" and part of a micro-lot from Finca El Vergel. 

Planted in 2016 with a quantity of 9.200 plants, this micro lot has been one of the most exotic of the estate developing totally unique profiles. For this specific profile, an extended anaerobic fermentation process is used, with an additional step that introduces water to stabilize the temperature of the fermentation process. Once fermentation is complete the coffee is sundried for an extended period of time with 4 stalls during the process to enhance the profile. 

The sum result of the volcanic nature of the farmland, the rare varietal and exotic processing is a yellow fruit explosion; Pineapple, Melon and Peach dominate. The acidity is raspberry esq and the finish is all dark chocolate. 

A wonderfully complex and delicious coffee, this is a limited micro-lot so get some while it lasts.
