Together with our sourcing partners on this coffee, Nordic Approach, we are excited to be able to bring you this experimentally processed coffee from the town of Kunasho in Gedeb.
Gedeb is in the Gedeo Zone which is to the south of Sidama and lies along the high peaks of the western side/slope of the Ethiopian highlands in the Guji region.
The area is incredibly high with elevations getting up to as high as 2993m above sea level. Combine this with heirloom varietals ancient to the area and an increasing desire for innovation at washing stations and the results are staggering.
In the case of this coffee the innovation in processing the cherries is about as DIY as you can get. Cherries are placed on plastic sheets on top of the raised beds in piles, up to 15-20 cm thick, they are then rolled in the plastic and left to ferment. After fermentation the cherries are dried on raised beds in the traditional natural method.

This coffee has super process driven flavors, with wild berry like fruit acetic acidity, a banana smoothie like texture and a chocolate fudgey finish.
