For 10 years now Secret Affair has been a modcup staple blend. Its make up has always been a South American coffee blended together with a washed process Ethiopian. Whether served from a cart or a cafe its intention has always been the same; to showcase a modern dynamic coffee experience. Using high elevation dense coffees and roasted on the lighter side of spectrum to highlight a brighter and sweeter flavor profile. With 30% of this blend now a cinnamon macerated fermented Colombian caturra the results are even spicier.
Maceration Cinnamon Fermentation
The fermentation/Inoculation process that uses tartaric acid and macerated cinnamon takes what is an average botanical cultivar (caturra) to new interesting heights and underscore the financial benefits experimentation when done to the highest level can provide for producers.
The process is fairly rudimentary: farmers will macerate (chop up) a fruit and add it into a grainpro bag of coffee cherries, add tartaric, seal and let nature and fermentation do its thing for 72h. After which they will remove the coffee cherries from the fermenting grainpro bags, wash and then honey process them - essentially removing the cherry skin and leaving it to dry with sticky mucilage still attached to the seed. While these seeds (beans) are drying additional macerated cinnamon is added to dry with.
