About the Semi-Washed Process
Semi-washed coffee processing, also called 'wet-hulled', involves removing the outer skin like in washed coffee, but keeping the mucilage (inner-mesocarp) on the parchment, which is then dried in the sun. Later, the parchment is taken off. The beans undergo a second drying phase, turning dark green when they reach 12-13% moisture content, indicating semi-washed coffee. This method enhances the coffee's body and intensity and is often used for Brazilian and Indonesian coffees.

About Gayo Aceh and Arisarina Cooperative
This coffee originates from the Arisarina Cooperative, which has several members. Arisarina owns the wet huller where the beans are brought to undergo processing. Situated in Aceh, Indonesia, the washing station was established in 2013 within the Gayo Aceh Province highlands in Sumatra. The cooperative sources its coffees from the neighboring villages of Atu Lntag, Bintag, and Sabon. They all share the objectives of enhancing the quality of coffee from the Gayo highlands and preserving the ecosystem for producing top-quality coffee beans. This area is also recognized as one of the largest arabica coffee regions in Southeast Asia.
