XO Process
The XO Process is Café Granja La Esperanza's signature extended fermentation, crafted to enhance sweetness, aromatics, and complexity without overshadowing the coffee's origin.
Through carefully controlled whole-cherry and parchment fermentations followed by slow drying, this Coffee develops vibrant structure and the distinctive cognac-like finish that defines the XO name.
