Classico passion fruit maceration blend
Classico is our most developed traditional style roast, a flavor profile intentionally crafted for those that like their coffee with milk, cream or plant based mylks. With a longer/deeper roast development we are able to caramelize the sugar-dense coffees that make up the blend for a richer and more decadent flavor profile. Employing a Central or South American coffee along with a naturally processed Ethiopian look for dark chocolate and undertones of winey berries. This coffee can be enjoyed with many different brew methods and with 20% of the blend now incorporating a Colombian Castillo that has been honey processed with wine yeast and macerated passion fruits, the results are truly modern.
Maceration Fruit Fermentation
The fermentation/Inoculation process that uses wine yeast and macerated fruits takes what is an average botanical cultivar (castillo) to new interesting heights and underscores the financial benefits experimentation when done to the highest level can provide for producers.
The process is fairly rudimentary: farmers will macerate (chop up) a fruit and add it into a grainpro bag of coffee cherries, add wine yeast, seal and let nature and fermentation do its thing for 72h. After which they will remove the coffee cherries from the fermenting grainpro bags, wash and then honey process them - essentially removing the cherry skin and leaving it to dry with sticky mucilage still attached to the seed. While these seeds (beans) are drying additional macerated fruit is added to dry with.
